Today is James’ birthday. Since we often go traveling in the Fall, he has spent many of his birthdays on the road in foreign places. So it’s always fun to figure out new ways to celebrate. We started by finding a T-shirt with his name in Italian. Now he is officially known as Giacomo (pronounced Jock-uh-mo)! I’m calling him Jock for short.
For those of you who know James, you remember that his number one birthday cake request is Terri’s homemade coconut cake. And we’re not talkin’ about any of that dried-up coconut. Nooo! We’re talkin’ filling and icing made with fresh coconut and loads of whipped cream. Of course, as any good southern girl knows, you buy the fresh frozen coconut at the Piggly Wiggly (aka “The Pig”). But that’s not an option in Italy.
So we’ve been looking for a coconut cake substitute, and I think we may have found it. While rummaging around at our local Mercato, we spied a tiramisu cake. What’s not to like? We took it out for a test drive last night and OMG! I didn’t need to know that even existed!
Needless to say, Giacomo is delighted. He’s sitting here eating it for his birthday breakfast, grinning from ear to ear.
